Does Ecovacs work with Home Assistant?

Yes, through a cloud integration that handles start, stop, docking and status. Room-level control and map features are more limited than Roborock.

Will it keep working if my internet is down?

The vacuum will still clean on its own schedule, but you will not be able to control it from Home Assistant, because the integration goes through Ecovacs' servers.
